Mini Margaritas
Spicy Pomelo + Blood Orange and Mint + Pink Pineapple Margaritas
Whether you’re gearing up for National Margarita Day, are in need of a celebratory drink or simply want a new skinny cocktail recipe - these mini margaritas are a winner. I tested three unique margarita flavors: Spicy Pomelo, Blood Orange and Mint, and my personal favorite was a Pink Pineapple Margarita. I’ve never had a pink pineapple before, so had to try this PinkGlow Pineapple by Del Monte. It was very sweet, with hardly any acidity and very pricey!
All three margaritas used the same blend of ingredients — squeezed the citrus, then mixed with lime juice, agave, Casamigos Reposado and lots of ice. For the PinkGlow, I blended some of the core pieces only (felt too guilty blending the other precious chunks into a cocktail) with ice, agave, lime juice and the Reposado. I garnished these libations with mint, citrus wedges and slices of Serrano Pepper. They were so delicious and I have to admit, I might have had one too many!
I recently quit drinking alcohol back in September of 2021, right before my 43rd birthday, but that hasn’t stopped me from enjoying my favorite margaritas mocktail style! Mini Margaritas
Ingredients
- 1/2 cup freshly squeezed fruit juice
- 1/2 cup freshly squeezed lime juice
- 1 tbsp agave syrup
- 1.5 oz of tequila reposado
- ice
Instructions
- Mix the fresh fruit juice, lime juice, agave, tequila and ice together by either by stirring, in a cocktail shaker, or in a blender
- Take a lime wedge and squeeze around the rim of your mini or large glass
- Dip the rim on a plate of sea salt, sugar, or tajin powder
- Add margarita to your glass, garnish with lime wedges, serrano chili slices, some mint sprigs and ENJOY!
