Hi friends! Here’s my quick and easy recipe for a scrumptious Asian Chicken Salad in Cabbage Cups! This is a great low-carb recipe for beginners.

There is so much crunchy goodness in these, you’re going to love every bite! You can always just enjoy this as a simple chicken salad recipe, but I find it more fun to serve and have them in these Savoy Cabbage cups, so give it a go!

Plus, savoy cabbage is a great source of vitamin C.

My favorite part of this salad are the homemade fried wonton strips...YUMMMM!!

If you want to change this into an easy vegan recipe, no problem! You can use the dressing to marinate and fry up some tofu in place of the chicken.

Try this scrumptious Asian Chicken Salad recipe in some cabbage cups to create fun, single servings! Delicious any way you choose to serve them!

Ingredients

Dressing / Marinade
Salad & Chicken
Garnish

Instructions

Make the Dressing and Marinate the Chicken
  1. Whiz all of the dressing ingredients together and add 1/4 cup of it to the chicken tenders in a separate mixing bowl
  2. Set aside the chicken and let it sit while you prep your salad veggies
Cook the Chicken & Make the Salad
  1. Over high heat, add 2 tbsp of avocado oil and saute your marinated chicken tenders for 3 minutes on each side
  2. Remove from the pan and let the tenders rest on a cutting board for about 1-2 mins, then chop them up
  3. Add all of your salad veggies into a mixing bowl, then add your chopped chicken tenders and toss with the remaining dressing
  4. Set your tossed salad aside
Fried Wonton Strips
  1. Slice your store bought wonton skins into 1" strips
  2. Add your avocado oil over high heat to a small pan, and fry the strips in batches for 30 seconds or until golden brown
  3. Set aside and cool on some paper towels to remove excess oil
Plate, Garnish and Serve
  1. Using a pair of tongs or salad fingers, add about 1 cup of your tossed salad into a single Savoy cabbage leaf
  2. Garnish with more toasted almond slivers, black sesame seeds, thinly sliced scallions, a sprig of fresh cilantro and the best part, 3-4 homemade wonton strips and ENJOY!
